  Bodil Cornell:

  small-scale food units significant

 

  stersund in Sweden is a UNESCO City of Gastronomy. To Bodil Cornell, Director of Eldrimner, Swedish national center for small-scale artisan food processing, Jmtland's County Administrative Board, gastronomy means much more than what taste buds feel.

  Boasting many small-scale food producers stersund produces a variety of foods, such as smoked meat and cheese from goats, and transports them into the city, said Cornell.

  Cornell believed that small-scale business units in food industry, usually with vitality, are of great importance. "It is like an old Chinese saying 'small boats are easy to take U turns',”she smiled.

  “Food industry asks for a lot of knowledge and creativity. If you are creative, you can make a lot of different things, new and special things. In a big unit, it's usually very difficult to make many types of food. But in small units, it's easier to change and have many different things to happen.”

  The small units are producing more rather than food itself. For example, milk can be produced on a farm, where people can make milk into cheese and sell it afterwards. Such process is attractive to visitors. Now, Cornell's center is training farmers to master such techniques.

  “This also may happen in China,”Cornell said. As a big fan of doufu, Chinese bean curd, Cornell believed the process of making doufu was fascinating as well.

 

  瑞典厄德特松德是联合国教科文组织美食之都。耶姆特兰省行政委员会瑞典国家小型食品加工技工中心主任波迪·科奈尔认为美食的含义远远在于味蕾的感觉之外。

  科奈尔介绍,厄德特松德周边有很多小型的食品生产厂家,它们制造从熏肉到羊奶奶酪等许多有趣的食品,然后这些食品又被运送到城市当中。她认为,这些食品产业中小型厂家非常重要而且充满活力,正如中国俗话所言“船小好调头”。

  “食品产业需要很多知识和创造性。如果你具有创造力,就可以制造出许多不同的东西来,而且是新颖和特别的东西。在大型的商业单位中,通常很难制造很多种食物。但是在小型机构中,比较容易改变和进行多品种的制作。”

  事实上,这些小型的生产单位所制造的不仅仅是食品。比如说,在农场里,除了有牛奶这种产品,还可以将牛奶变成奶酪,此后在农场上销售。这个过程本身就能够吸引旅游者到农场来观看。科奈尔所在的小型食品加工技工中心就是教授农场主进行这些生产活动所需技术的组织。

  “同样的事情也可以在中国发生。”作为一个“豆腐迷”,科奈尔认为豆腐的生产过程就足够吸引旅游者。
